Zucchini Bread

4 eggs
3 c. sugar
1-1/4 c. oil
3 c. grated zucchini
4 T. vanilla
1/2 t. baking powder
2 t. salt
2 t. soda
4 t. cinnamon
4-1/4 c. flour
1 c. chopped walnuts

Beat eggs and sugar, add oil. Beat well then add zucchini and vanilla. Sift dry ingredients together but save 1/4 c. to mix with nuts at the end. Mix dry ingredients in until well blended. Pour into three greased/floured loaf pans and bake at 325° for 1 hour.

Bake about 12 minutes at 450°.
