Banana Bread
1/3 c. margarine or butter, softened
2/3 c. sugar
2 large eggs
1-1/2 c. mashed ripe banana |
1-1/2 c. all-purpose flour
2 t. baking powder
1/4 t. baking soda
Pinch of salt |
Preheat oven to 375°. Grease and flour a 9x5x3" loaf pan. Using an electric
mixer, cream margarine or butter and sugar in a large bowl. Add eggs and mix
until well incorporated. Mix in banana with a wooden spoon.
In a medium bowl, sift flour, baking powder, baking soda, and salt together.
Mix the dry ingredients into the banana mixture with a wooden spoon until well
blended and pour into the loaf pan. Bake for 20 minutes at 375°, then reduce to
350° and finish baking for 30 to 40 minutes or until a toothpick inserted in the
middle comes out clean.
Cool on a wire rack before removing from pan. Once cool, remove from pan by
placing a plate on top of pan and turn over pan onto the plate.
