Baked Cheesecake

Crust:
32 graham crackers
2-1/2 T. sugar
1 stick butter, melted

Put graham crackers in a plastic bag and crush to make crumbs. In a bowl, mix sugar and melted butter and pour over crumbs. Mix until cookie dough consistency. Pat mixture into bottom of 9x13" pan. Save 1/2 c. for top.

Filling:
4 – 8 oz. pkg. cream cheese
6 eggs, well beaten
1-1/2 c. sugar and 1-1/2 t. vanilla

In a bowl, mix together cream cheese, well-beaten eggs, sugar, and vanilla. Beat until creamy, no lumps. Add mixture to pan and bake at 350° for 30 minutes.

Topping: 1 pt. sour cream - 1 t. vanilla - 3 t. sugar

When cheesecake is slightly cool, add topping and place back in oven at 450° for 7 minutes. Sprinkle graham cracker crumbs on top.
