Pineapple Cake
Mix:
2 c. sugar
1/4 c. oil
2 eggs |
Add:
2 c. flour
2 t. baking soda
1 large can crushed pineapple
(not drained) |
Mix well and pour into a 9x13" glass baking dish
and bake at 350° for about 35 minutes.

Topping
1 small can evaporated milk
1 c. sugar
1 stick of butter |
1 c. pecans, chopped
1 c. coconut

Boil first three ingredients slowly for 10 minutes.
Remove from heat and add pecans and coconut.
Pour over cake while both are warm.
Makes 8-10 servings
