Carrot Cake
2-1/4 c. flour
2 t. salt
2 t. baking soda
2 t. cinnamon |
2 c. sugar
1-1/2 c. vegetable oil
4 eggs
3 c. raw carrots
1-1/2 c. walnuts |

Cream Cheese Frosting
3 oz. pkg. cream cheese, softened
1/4 c. butter, softened
1-1/2 c. powdered sugar

1/2 t. vanilla extract 1/8 t. salt

Grease well and flour a 9x13" pan. Sift
together flour, salt, baking soda, and
cinnamon. Set aside. In a large bowl
combine sugar, oil, and eggs at medium
speed for 2 minutes. Gradually add flour
mixture and beat at low speed
for 1 minute.
Stir in carrots and walnuts.
Pour batter into pan and bake at
300° for 1 hour and 10 minutes. Cool.
Mix frosting ingredients together
and frost cake.
