Lazy Daisy Oatmeal Cake

1-1/4 c. boiling water
1 c. uncooked oatmeal
1/2 c. margarine, softened
1 c. granulated sugar
1 c. firmly-packed brown sugar
1 t. vanilla
2 eggs
1-1/2 c. sifted all-purpose flour
1 t. baking soda
1/2 t. salt
3/4 t. cinnamon
1/4 t. nutmeg

Pour boiling water over oatmeal, cover, let stand 20 minutes.

Beat margarine until creamy. Gradually add sugars and beat until fluffy. Blend in vanilla and eggs. Stir in oats.

Sift together flour, soda, salt, and spices. Add to creamed mixture and mix well.

Pour into well-greased and floured 9" square pan. Bake in 350° preheated oven for 50-55 minutes. Do not remove from pan.

Serve warm or cold.



1/4 c. melted margarine
1/2 c. firmly-packed brown sugar
3 T. half & half
1/3 c. chopped nuts
3/4 c. shredded or flaked coconut

Combine all frosting ingredients in a small saucepan over low heat. Spread over cake. Broil until bubbly (nuts will be lightly toasted).
