Pineapple Nut Cake

2 large eggs
20 oz. can crushed pineapple
(with juice and all)
2 c. sugar
2 c. pre-sifted flour
2 t. baking soda
1 c. broken pecan pieces
(walnuts may be used if preferred)

Stir together eggs and pineapple. Add sugar, flour, and soda, one at a time, stirring after each one. Fold in nuts and mix well.

Pour into a 9x13" greased pan or glass baking dish (preferable) and bake at 350° for 40-45 minutes (check for doneness with toothpick).

 

Frosting

8 oz. pkg. cream cheese
1 stick butter
1 t. vanilla
2 c. powdered sugar

Soften cream cheese and butter slightly in microwave (about 15 seconds or so). Stir. Add vanilla, mix well, and then add powdered sugar stirring well until creamy. Spread on cooled cake and add sprinkles if desired.
