Pumpkin Cookies
1/2 c. shortening
l-1/2 c. sugar
1 c. pumpkin
1 egg |
2-1/2 c. flour
1 t. baking powder
1 t. baking soda
1/2 t. salt |
1 t. vanilla
1 t. nutmeg
1 t. cinnamon
1/2 c. nuts (if desired)
1 c. chocolate chips or raisins |
Cream the shortening and sugar until fluffy. Add egg and mix well. Add
canned pumpkin. Sift flour, baking powder, baking soda, salt, and spices.
Gradually add sifted dry ingredients, beating well after each addition until
smooth. Fold in chocolate chips, nuts, or raisins to taste. Bake in a preheated oven at 350° for approximately 20 minutes.
Makes about 3 dozen cookies
