LIME AND BLACKBERRY CHEESECAKE

Crust:
4 ounces butter
2 1/2 ounces granulated sugar
1 teaspoon lime zest
1 teaspoon orange zest 1/4
1 teaspoon Grand Marnier®
1 cup flour
1/4 teaspoon salt
3 tablespoons butter

Place all ingredients (except 3 tablespoons of butter) in the bowl of a food processor and blend until mixture is combined and forms a ball around blade. Remove and press into your pie pan. Bake in a 375 Fahrenheit oven until just dry, you do not want color. Break hot crust into pieces and place back into the bowl of the food processor along with 3 tablespoons butter. Blend until finely ground and press mixture back into pie pan; reserve.

Filling:
1 pound 8 ounces cream cheese
2 cups granulated sugar
2 teaspoons lime zest
6 eggs
1 teaspoon vanilla
1/2 cup lime juice
1/4 cup flour
2 tablespoons cornstarch
1/2 teaspoon salt
1 cup blackberries

Cream together cream cheese and sugar, scraping down bowl occasionally. Add lime zest, eggs, vanilla, and lime juice, blend well. Add flour, cornstarch, and salt and continue to mix, scraping down bowl to assure that there are no lumps. Fold in blackberries and pour into prepared crust. Bake at 375 Fahrenheit for approximately 1 1/2 hours. Cake should have risen slightly and the center should be slightly cool.
