BLACK FOREST CAKE

one 9-inch round white cake (1/4 inch)
two 9-inch round chocolate cakes (1/4 inch)

use favorite white and chocolate cake recipes

Filling:
1 quart heavy cream
1 1/2 ounces Kirschwasser (cherry brandy)
12 ounces cherry filling
4 ounces chocolate shavings
12 decorating cherries

As a base, use one chocolate cake round, sprinkle with Kirschwasser, and spread on cherry filling evenly. Then layering cake, cover with 1/3 of nicely whipped heavy cream (stiff peak), one white cake round, sprinkle with Kirschwasser, cover with 1/3 of nicely whipped cream (stiff peak), cover with second chocolate cake round, and sprinkle with Kirschwasser. Cover whole cake with remaining whipped cream (save enough whipped cream to make 12 rosettes). Sprinkle entire cake with chocolate shavings. Chill for one hour. Cut into 12 pieces, put a rosette on each piece, place one cherry on each rosette.
Yield: one 10-inch cake.
