The
Food and Beverage Management Department is part of the William F.
Harrah College of Hotel Administration at the University of Nevada,
Las Vegas. Its faculty teaches courses for students receiving their
Bachelor of Science degrees in Hotel Administration and Culinary
Arts Management. These include required courses such as Food Service
Operations Fundamentals, Hospitality Purchasing, and Food and Beverage
Cost Control, and elective courses such as Beers, Foreign Wines,
Domestic Wines, Distilled Spirits and Liqueurs, and Restaurant Management.
Its students receive jobs as chefs, dining room managers, general
managers, and food and beverage directors. Students in the department's
new Beverage Management major will be the next generation of sommeliers
and wine and liquor company executives. The department also operates
special programs where students can study in Hawaii, the Caribbean,
Italy, and Switzerland.
